750 grams starchy potatoes
600 grams Beef fillet (trimmed)
salt

1 Tbsp clarified butter
2 Tbsps grated Parmesan
1 Tbsp cornstarch
1 egg
Nutmeg
2 Tbsps butter (melted)

Preparation steps

Rinse potatoes, boil in salted water until soft and drain. Peel potatoes, press half through a potato ricer and let cool slightly. Coarsely grate remaining potatoes and let cool slightly.

Preheat oven to 200°C (approximately 400°F). Rinse meat, pat dry and rub with salt and pepper. Heat 1 tablespoon clarified butter and brown meat on all sides. Remove meat from pan and place on a baking sheet lined with parchment paper. Gently mix mashed potatoes with grated potatoes. Stir parmesan, cornstarch and egg into potatoes and season with salt, pepper and nutmeg.

Spread potato mixture over top and sides of beef fillet, brush with melted butter and bake until golden brown, about 15 minutes. Cut into slices to serve.
