- 750 grams waxy potatoes
- 1 onion
- 1 stalk Leeks
- 2 Parsnips
- 3 carrots
- 150 grams Celery root
- 2 bay leaves
- 2 parsley
- 1 thyme
- salt
- freshly ground peppers
- 1 ⅕ liters Vegetable broth (or instant powdered broth)
- 2 Tbsps butter
- Chervil (for garnish)

Preparation steps
1.
Peel the potatoes, onion, parsnips, carrots and celery root and cut everything into small cubes.
2.
Rinse and trim the leek and cut the white and light green section into small cubes.
3.
Place the vegetables with the broth in a pot and season with salt and pepper. Add the bay leaves and the parsley and thyme sprigs, bring to a boil, cover and simmer for about 30 minutes over low heat.
4.
Remove the herbs, stir in the butter and season to taste.
Serve garnished with chervil.
