600 grams Pork tenderloin (ready to cook)

30 grams clarified butter
1 bunch Basil
12 slices Serrano ham

Preparation steps

1.

Rinse pork, pat dry, trim and cut into 1.5 cm (approximately 1/2 inch) thick medallions. Season on both sides with salt and pepper. Heat butter in a pan and fry pork on both sides until golden brown. Remove and let stand briefly.

2.

Rinse basil, shake dry and pluck off the leaves. Cover each pork medallion with 2 basil leaves and wrap each with a slice of ham. Seal ham with toothpick and fry in the pan on all sides until crispy.
