4 Tbsps lemon juice
2 Tbsps White vinegar
1 tsp medium-hot Mustard

Preparation steps

1.

Drain the bocconcini. Peel and finely dice the shallots and garlic. Sauté both until 1 tablespoon of olive oil until translucent. Remove from the heat and let cool. 

2.

Mix the lemon juice with the vinegar and mustard. Add the shallots and garlic, then gradually incorporate the remaining oil. Season to taste with salt, pepper, and sugar. 

3.

Finely chop the basil then stir into the dressing. Add the mozzarella and chill in the refrigerator for at least 1 hour.
