- 800 grams Pork tenderloin
- salt
- freshly ground peppers
- 2 Tbsps Canola oil
- 2 onions
- 6 Date (pitted)
- 80 grams green Olives (pitted)
- 1 Tbsp butter
- 2 generous pinches sweet ground paprika
- 1 generous pinch Cumin (ground)
- 100 milliliters Chicken broth
- 3 stalks Leeks

Preparation steps

Remove sinews from pork and season with salt and pepper. Heat canola oil in a pan. Fry pork until browned on all sides. Place pork in a baking dish and set aside.

Peel and dice onions. Finely chop dates and olives. In a pan, fry onions in melted butter. Add dates and olives and season with salt, pepper, paprika, and ground cumin. Add chicken broth and bring to a boil. Pour mixture over pork.

Preheat oven to 100°C convection (approximately 210°F). Rinse and trim leek, cut into pieces and place crosswise over pork. Cover dish with foil and bake about 60 minutes. Cut pork into medallions and serve in the baking dish.
