- 2 pork fillets
- 4 Tbsps olive oil (plus extra for drizzling)
- salt
- freshly ground Black pepper
- 4 sticks Rhubarb (thickly sliced)
- ½ cup raisins
- 2 sprigs rosemary
Preparation steps

Heat the oven to 220°C (200° fan) 425°F gas 7. Rub the olive oil into the pork fillets and season to taste with salt and pepper.

Place the rhubarb in a roasting dish and scatter over the raisins.
3.
Lay the pork fillets on top and top with the rosemary sprigs.
4.
Drizzle with a little olive oil and cover with foil. Cook for 15 minutes, then remove the foil and cook for a further 15 minutes.
