For the steaks
4 Pork (each about 180 grams)
salt
freshly ground peppers
1 Tbsp clarified butter
For the salad
200 grams mixed Lettuce (and watercress, spinach, beetroot leaves)
1 Red onion
2 Tbsps Pine nuts
3 Tbsps Red wine vinegar
5 Tbsps olive oil
salt
freshly ground peppers
1 pinch sugar
For the mango chutney(for 2 jars)
2 Mangoes
¼ l apple cider vinegar
250 grams sugar
1 tsp salt
½ tsp Cardamom
½ tsp fennel seeds

Preparation steps

1.

For the mango chutney: peel mangoes, pit and dice. Combine with apple cider and vinegar and let stand for 10 minutes. Season with sugar, salt and spices and simmer on low heat for about 40-50 minutes or until chutney thickens.

Pour chutney into prepared preserving jars and seal well.

For the salad: rinse and spin dry lettuce, tear into smaller pieces if needed. Peel onion and cut into rings. 

4.

Whisk oil and vinegar, season with salt, pepper and sugar. Toast  pine nuts in a dry pan.

5.

For the steaks: season steaks with salt and pepper. Heat clarified butter in a pan and cook steaks for 3-4 minutes per side.

6.

Toss salad with dressing. Arrange salad, steaks and chutney on plates and serve.
