- 250 grams fatty Bacon
- 500 grams Pork (such as shoulder)
- 4 centiliters sherry
- 200 milliliters dry white wine
- 2 garlic cloves
- 1 stalk Leeks
- 2 bay leaves
- 1 stem Sage
- 1 Tbsp freshly chopped Tarragon
- 1 Tbsp freshly chopped parsley
- 2 Tbsps green peppercorns
- salt
- freshly ground peppers

Preparation steps
1.
Cut bacon into small cubes and leave for about 20 minutes slowly cooking over low heat in a saucepan. Add pork chop to bacon and pour in sherry. Add wine and about 100 ml (approximately 3 1/3 ounces) of water.

Peel garlic cloves and finely chop. Rinse leeks and cut into small pieces. Add garlic, bay leaves and sage to the meat. Seal the pot well with a lid and gently simmer over low heat for 2-3 hours.

Break up pieces of meat with a wooden spoon. Remove bay leaves and sage. Mix meat with chopped herbs and peppercorns, season with salt and pepper and pour into jars and seal. Allow to cool well before serving.
