- 4 pork fillets (medallions)
- salt
- freshly ground Black pepper
- 3 Tbsps balsamic vinegar
- 1 Tbsp olive oil
- 2 large Eggplant (sliced)
- 2 Zucchini (thinly sliced into ribbons)
- 2 red Bell pepper (seeds removed and thickly sliced)
- 1 yellow Bell pepper (seeds removed and thickly sliced)
- 16 button Mushrooms
- 2 cloves garlic cloves (crushed)
- To garnish
- 2 sprigs rosemary

Preparation steps
1.
Heat the grill to high.

Season the pork medallions with salt and pepper. Grill for 8-10 minutes, turning once, until cooked through. Set aside and keep warm in a low oven.
3.
Whisk together the vinegar and oil and toss the vegetables until coated.
4.
Grill the vegetables in batches, for 8-12 minutes, turning once and brushing with any remaining marinade if necessary, until tender and lightly charred.
5.
Put into a warm serving dish with the pork medallions and garnish with rosemary.
