Preparation steps

1.

Rinse the meat under cold water, pat dry, remove tendons and cut into 1.5 cm (approximately 1/2 inch) wide medallions.

2.

Season the meat with salt and pepper and brown in a hot pan with melted margarine on all sides. Reduce the heat and let medallions simmer until pink inside.

3.

Peel the kohlrabi, cut into strips and blanch for 5 minutes in boiling salted water. Rinse under cold water and drain well in a colander.

4.

Heat the remaining margarine and fry the kohlrabi strips until golden brown. Season with salt, pepper and nutmeg.

5.

Serve the kohlrabi fries with the pork medallions on preheated plates. Serve garnished with basil.
