- 2 scallions (finely chopped)
- ¾ inch fresh ginger (finely diced)
- 1 shallot (finely diced)
- 1 Lemongrass (white part only, very finely chopped)
- 2 Tbsps vegetable oil
- 3 ⅓ cups ground pork
- 1 Tbsp fresh cilantro (chopped)
- 1 Tbsp freshly chopped Thai basil
- 1 Tbsp Lime juice
- 4 leaves Iceberg lettuce

Preparation steps
1.
Sauté the spring onions, ginger, shallot and lemongrass gently in hot oil, without browning. Add the minced pork and cook together, stirring, for around 5 minutes until the mixture has a crumbly texture.
2.
Add the herbs and season to taste with lime juice and salt.
3.
Serve the mince in lettuce leaves, with dips if desired.
