- 2 Tbsps vegetable oil
- 11 ozs pork fillets (dice small)
- 1 clove garlic cloves (crushed)
- 1 small, red chili pepper (seeds removed chopped)
- 2 Tbsps sugar
- 1 Tbsp Fish sauce
- ⅜ cup light soy sauce
- 1 Tbsp sesame oil
- 4 scallions (chopped)
- ½ bunch cilantro (chopped)
- little gem Lettuce (leaves)
- To garnish

Preparation steps
1.
Heat the oil in a large wok or frying pan and add the pork and garlic. Fry for 5-8 minutes until cooked through.
2.
Reduce the heat and add the chilli, sugar, fish sauce, soy sauce and sesame oil. Stir for a minute or two until the mixture thickens.
3.
Remove from the heat and add the spring onions and coriander.
4.
Place the lettuce leaves on a serving plate and spoon the mixture into each leaf. Garnish with coriander leaves.
