- 41 ozs pork roast
- 1 ¾ cups Barbecue sauce
- 1 tsp brown sugar
- 1 Tbsp fresh lemon juice
- 1 Red onion (sliced)
- 2 Tbsps olive oil
- 2 Tbsps balsamic vinegar
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- Lettuce
- 8 Hamburger bun

Preparation steps
1.
Place the pork roast in a slow cooker. Cover; cook on high for 5 to 6 hours or until pork is tender.
2.
Remove the pork roast from the slow cooker and shred with 2 forks. Pour out any liquid in the pot. Return the pork to the cooker; add the barbecue sauce, brown sugar, and lemon juice. Cook on high for 1 hour.

Place the sliced onions on a rimmed baking sheet. Drizzle the onions with olive oil, vinegar, salt and pepper. Toss until well incorporated.

Bake in a preheated 400º F / 205º C oven for 40 minutes; stirring every 10 minutes.

Place a few lettuce leaves on a bun, spoon a portion of the pulled pork onto the lettuce. Add a small amount of the onions and add the top of the bun. Repeat the process for the remaining sandwiches and serve.
