- 1 Bread roll
- 12 medium Tomatoes (tops sliced off, carefully hollowed out)
- 1 onion (peeled, finely chopped)
- 3 ⅓ cups Sausage meat
- 1 egg yolk
- 2 Tbsps fresh Fresh herbs (thyme and basil, chopped)
- 1 ½ cups Basmati rice
- 3 cups vegetable stock

Preparation steps
1.
Preheat the oven to 180°C (160°C in a fan oven), 350°F, gas 4.
2.
Soften the bread roll in a little lukewarm water, then squeeze out the water. Mix the roll thoroughly with the sausage meat, onion and egg yolk. Mix in the herbs and season with salt and ground black pepper. Stuff the tomatoes with the mixture.
3.
Place the rice in a roasting tin and pour over the stock. Arrange the tomatoes and their tops on the rice. Season with salt and pepper and cook for about 30 minutes.
4.
Serve in the roasting tin.
