Ingredients

For the filling
1 Tbsp butter
1 large onion (finely chopped)
salt
freshly ground Black pepper
1 ⅛ cups cream (48% fat)
cup chicken stock (or turkey stock)
1 Tbsp chopped thyme
24 ozs cooked ham (cut into chunks)
For the mashed potato
42 ozs potatoes
1 Tbsp butter
1 egg yolk
3 Tbsps milk

Preparation steps

1.
For the filling: heat the butter in a pan and season with salt and black pepper and cook over low heat until the onion is soft but not browned.
2.
Add the cream, stock and thyme and bring to a boil. Simmer for a few minutes to thicken.

Add the ham and stir well.
4.
For the mashed potato: put the potatoes in a pan and cover with water. Add a pinch of salt and bring to a boil. Cover and cook until tender. Drain well.
5.
Heat the oven to 180°C (160° fan) 350°F gas 4.
6.
Mash the potatoes roughly and then add the butter, egg yolk and milk and mash until smooth. Season to taste, with salt and black pepper.
7.
Pour the ham mixture into a baking dish and top with the mashed potato.
8.
Cook for 20-30 minutes, until the potato topping is golden brown and the filling is piping hot.
