1.
Chop the chives, reserving 2-3 strands for garnish.

Put the water and butter in a pan and bring to the boil, cooking for 1 minute.

Remove from the heat and add all the flour in one go beating until the mixture is smooth.

Crack in the eggs one at a time, beating well between each addition.
5.
Heat the oil in a heavy-based pan until a cube of bread sizzles and browns. Drop teaspoons of the batter into the hot oil and fry for 1-2 minutes until crisp and brown.
6.
Remove from pan with a slotted spoon and dry on kitchen paper.
7.
Plate up the sliced ham and sliced radishes and scatter the savoury beignets around the plate. Sprinkle with sea salt and serve.
