Pork and Mixed Veg Stew

Heat the oil in a casserole dish. Season the pork and saute in the oil until browned all over.
Add the aubergine, peppers, onion, and a pinch of salt, sautéing for 5 minutes until softened. Stir in the passata, chopped tomatoes, and stock.
Bring to a simmer, cover with a lid, and braise over a reduced heat for 45 - 50 minutes until the pork is tender.
Season to taste with salt and pepper before spooning into bowls. Serve with a garnish of chopped parsley on top.
