¾ cube Yeast (42 grams)
1 tsp sugar
175 grams Spelt flour
175 grams Rye flour
175 grams Whole spelt seeds
12 grams Sourdough powder
150 milliliters Buttermilk
50 grams Lard
1 tsp salt
3 Tbsps Poppy seeds
Pastry flour (for the table)
Lard (for the pan)

Preparation steps

Dissolve the yeast in 200 ml (approximately 1 cup) of lukewarm water with the sugar.

Let rest covered for about 15 minutes. Mix both flours with the sourdough powder and spelt seeds. Knead the yeast, buttermilk, lard, and salt with the flour for about 10 minutes. Add a little flour or water if necessary. Place the dough in a bowl and cover with plastic wrap. Let rise for 2 hours. Grease the baking pan and sprinkle with poppy seeds. Knead the dough briefly and form into a log. Place in the baking dish Cover and let stand in a warm place for 1 hour.

Preheat the oven to 200°C (approximately 400°F). Brush the surface of the bread dough with water. Score with a knife and sprinkle with poppy seeds. Bake in a preheated oven at 180°C (approximately 350°F) for 40-50 minutes. Remove from the oven. take out of the pan and let cool on a wire rack.
