- For the poppy cookies
- 150 grams butter
- 60 grams sugar
- 1 generous pinch cinnamon
- 1 egg yolk
- 1 Vanilla bean
- 150 grams Pastry flour
- 2 Tbsps Poppy seeds
- 100 grams Couverture
- 1 Tbsp cocoa powder
- Poppy seeds (to sprinkle)

Preparation steps

Whisk butter, sugar and egg yolks until fluffy. Cut vanilla bean and scrape out seeds. Stir vanilla seeds, cinnamon, flour and poppy. From dough into 2 portions. Stir in the cocoa in one portion and set aside. Fill the other (light) batter into a piping bag with a large star tip and pipe rosettes on a lined baking sheet.

Put the rosettes aside, fill dark dough into a small piping bag with, put a dab of batter in each of the middle of the poppy star and then sprinkle with poppy seeds. Place in the oven at 190°C (approximately 375°F) and bake for about 10 minutes. Remove and cool on a wire rack. Melt chocolate in a water bath, sprinkle on cooled cookies and line the edge with chocolate. Let dry.
