- 1 carrot
- ½ Celery root
- 1 Red onion
- ⅕ l white wine
- 1 lemon (juiced)
- 50 grams Morel (clean)
- 2 Tbsps salt
- 1 tsp peppercorns
- 2 Tbsps sugar
- 4 Carp (very fresh, ready to cook á 200 g)
- In addition
- Cherry tomatoes (halved)

Preparation steps
1.
Peel carrot and celery, cut into cubes. Peel onion and cut into rings. Place vegetables into boiling water and add white wine, lemon juice, season with salt and sugar and remove from heat. Add carp fillets and morels. Cover and let stand for at least 3 hours, better overnight.
2.
Arrange fillets on plates and garnish with thyme and tomatoes. Serve with fresh bread.
