- For the pierogi
- 3 cups all-purpose flour
- 1 egg
- For the filling
- 3 cups Blueberries
- 1 Tbsp sugar (to taste)
- 1 tsp Corn starch
- You will also need
- powdered sugar
- plain Yogurt

Preparation steps
1.
Sieve the flour and mix with the egg, a pinch of salt and 150 ml hot water. Knead to form a smooth, homogeneous dough, adding a little water or flour if necessary. Shape into a ball, cover and leave to rest for around 30 minutes.

For the filling, mix the berries with the sugar and cornflour.

Roll the dough out on a floured surface and cut out circles 8 cm in diameter. Spoon 1-2 tsp of filling onto one half of each circle and fold into a semicircular shape. Use a fork to press the edges together.
4.
Bring a large pan of water to the boil with a pinch each of salt and sugar and cook the parcels for 4-5 minutes. Remove with a slotted spoon and arrange on plates. Dust with icing sugar and serve with a spoonful of yoghurt.
