Preparation steps

Rinse the turkey breast, pat dry and very finely chop. Rinse, trim and finely chop the scallions. Mix with the turkey and season with salt, pepper and cumin. Shape the mixture into about 8 small balls.

Preheat the oven to 180°C (approximately 350°F) upper and lower heat.

Rinse, trim and blanch the green beans for 4-5 minutes in boiling salted water. Rinse with cold water, drain and cut into small pieces. Rinse, trim and cut the pepper into thin strips. Blanch the tomatoes, rinse with cold water, peel, quarter, core and finely dice. Place the prepared vegetables in a baking dish and top with the meatballs.

Mix the eggs with the cornmeal, cream and the Parmesan. Season well with salt and pepper. Spread over the meatballs and bake about 30 minutes until golden brown. Remove from the oven and serve.
