- For the meat
- 1 bunch Soup vegetables
- 1 kilogram Beef brisket (trimmed)
- 1 bay leaf
- 2 allspice
- 3 peppercorns
- salt
- For the sauce
- 2 handfuls fresh Fresh herbs (chives, parsley, watercress, chervil, borage and sorrel)
- 2 hard-boiled eggs
- 1 shallot
- 150 grams Yogurt (0.1% fat)
- 250 grams Whipped cream
- lemon juice
- freshly ground peppers
- To serve
- 500 grams waxy potatoes
Preparation steps

For the meat: Rinse the soup vegetables, trim and cut into pieces. Rinse the meat, transfer to a pot along with the vegetables and spices, fill with water to cover and bring to a boil. Season with salt. Skim the foam and simmer over medium heat for 2 hours.

Meanwhile, for the sauce: Rinse the herbs, shake dry and finely chop the leaves. Peel the eggs and chop. Peel the shallot, mince and mix with the eggs, herbs, sour cream, yogurt and lemon juice and season with salt, pepper and sugar, if desired.

Peel the potatoes, rinse, cut into quarters and cook in boiling salted water for 20-25 minutes. Remove the meat from the broth, slice and serve with the potatoes, drizzled with a little broth and the green sauce on the side.
