- soft breadcrumbs (for the baking dish)
- 28 ozs Plum (or oval plums)
- 4 eggs (large)
- 8 ½ ozs cream cheese
- 3 ½ fluid ozs Whipped cream
- ½ lemon (zest and juice)
- 1 generous pinch Vanilla bean
- 3 ½ ozs sugar
- 2 ½ ozs breadcrumbs
- powdered sugar (for dusting)

Preparation steps

Preheat the oven to 350°F. Grease a baking dish and line with breadcrumbs.

Rinse, halve and pit the plums. Separate the eggs and beat the yolks with the cream cheese, the cream, lemon zest, vanilla and sugar. Whisk the egg whites with the lemon juice until stiff and fold together with the breadcrumbs into the cream cheese mixture. Lay half of the plums on the bottom of the baking dish and cover with the mixture. Distribute evenly, cover with the remaining plums and bake in the oven until golden brown, about 40 minutes.

Remove from the oven and best serve hot, dusted with powdered sugar.
