- 250 grams canned Pineapple
- 100 grams butter
- 100 grams sugar
- 3 eggs
- salt
- 250 milliliters Buttermilk
- 300 grams Pastry flour
- 2 tsps Baking powder
- 80 ground Poppy seeds

- 1 Muffin tin (12 wells)

Preparation steps

For baking: Preheat the oven to 180°C (approximately 350°F). Line the muffin tin with parchment paper.

For the muffins: Drain the pineapple and chop into cubes. Melt the butter in a small pot and allow to cool. In a bowl, stir the butter with the sugar, eggs, 1 pinch of salt and the buttermilk. In another bowl, stir the flour with the baking powder and poppy seeds. Stir the flour mixture into the butter mixture until thoroughly combined. Stir in the pineapple cubes. Divide the batter between the muffin cups. Bake for 30 minutes. Remove from the oven and cool slightly. Remove the muffins and allow to cool completely on a wire rack.
