- 4 Pike fillets (tail piece, about 450 grams)
- 400 milliliters fish stock
- 3 sun-dried Tomatoes (in oil)
- 125 milliliters white wine
- 2 tsps ginger (freshly grated)
- 1 tsp Coriander
- 4 fresh bay leaves
- 1 Tbsp lemon juice
- salt
- white peppers (freshly ground)

Preparation steps

Season pike fillets with salt and pepper and sprinkle with lemon juice.

Cut sun-dried tomatoes into small cubes. In a wide, shallow pan, sauté tomatoes in 1 tablespoon of the oil from the jar. Add 1/2 tablespoon ginger, coriander seeds and bay leaf. Sauté briefly, then deglaze with wine and cook until completely reduced. Add fish stock, bring to a boil, then reduce heat. Add pike fillets. Cover and cook over low heat, about 5 minutes.

Divide fish among warmed plates and drizzle with sauce. Sprinkle with remaining ginger.
