A Finnish study has shown that daily consumption of tomatoes can reduce the risk of stroke by up to 55 percent. If the tomatoes are combined with olive oil, as here, then they taste all the better and at the same time protect the heart and vessels, because the many unsaturated fatty acids lower blood pressure and cholesterol levels.

Serve the pickled dried tomatoes with a snack. You can find the right recipes for delicious rolls in our recipe collection. But the tomatoes can also be used in a salad, a tomato sauce or a vegetable pan and are delicious.

50 milliliters white balsamic vinegar
75 grams dried Tomatoes
2 garlic cloves
1 dried Peperoncino
100 milliliters olive oil

Preparation steps

Boil the vinegar with 1 liter (appoximately 4 cups) of water and pour over the tomatoes. Let soak 20 minutes. Drain well, spread on a kitchen towel and allow to dry for about 2 hours.

Meanwhile, peel the garlic and coarsely chop or cut into slices.

Crumble the pepperoncini over the tomatoes. Layer the garlic and tomatoes in alternating layers in the glass jar. Cover with oil and tightly close. Keep cool and dry.
