Piadini with Feta Cheese
Ingredients
- For the PIta
- 400 grams Pastry flour
- ½ cube Yeast (about 20 grams)
- 1 pinch sugar
- ½ tsp salt
- 1 Tbsp vegetable oil
- 2 Tbsps Yogurt (0.1% fat)
- For the Filling
- 200 Feta
- 1 bunch parsley (chopped)
- 4 Tbsps olive oil
- juice of half lemons
- 2 garlic cloves (peeled and chopped)
Preparation steps
To make the piadini: Dissolve the yeast and sugar into 150 ml (about 2/3 cup) lukewarm water in a small bowl. In a mixing bowl, knead together the flour, yeast mixture, salt, oil, and yogurt to a smooth dough. Cover let rise in a warm place such as an oven heated to 50°C (approximately 125°F) for about 1 hour.
Turn the dough out onto a floured work suface and knead vigorously. Divide the dough into 2 equal pieces and shape each one into a flat oval disc.
To make the filling: Use a fork to mash together the feta cheese, oil, parsley, lemon juice, and garlic. Divide between the dough ovals, spooning the filling down the center. Fold in the outer edges and transfer to a baking sheet lined with parchment. Bake in an oven preheated to 225°C (approximately 450°F) about 20 to 25 minutes.
To serve, cut the piadini into slices.
