- 3 Tbsps olive oil
- 5 scallions (finely chopped)
- ¼ tsp grated Nutmeg
- 2 cups soft Goat cheese (crumbled)

- ¼ cup butter (melted)

1 Baking sheet, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Teaspoon, 1 Peeler, 1 Brush, 1 Aluminum foil, 1 Citrus juicer, 1 Kitchen shears
Preparation steps
1.
Put the spinach in a large pan. Cover and cook until wilted then drain, squeezing out as much liquid as possible. Finely chop the leaves and set aside.

Heat the oil in a pan and gently cook the spring onions until soft. Stir in the spinach, nutmeg and goats cheese and cook for 2 minutes. Drain off any liquid, season with salt and pepper and set aside.

Heat the oven to 180°C (160°C fan) 375°F gas 5. Grease a baking tray.

Cut the pastry into 15 6 x 6 cm| 2 1/2 " rectangles and brush with melted butter. Put a small spoonful of the mixture on the end of each rectangle and fold 3 times to make a triangular parcel.
5.
Place the parcels on the baking tray, brush with more melted butter and bake for 10-15 minutes, until golden brown. Serve hot or cold.
