- 2 cups fresh Basil (packed and chopped)
- ⅓ cup toasted Pine nuts
- ⅔ cup extra virgin olive oil
- ½ cup Parmesan (grated)
- 3 cloves medium-sized garlic cloves (pressed)
- kosher salt (or sea salt)
- 16 ozs Vermicelli (or other thin cut spaghetti)

Preparation steps
1.
Place chopped basil and toasted pine nuts into a food processor. Add about 1/3 of the olive oil and puree until smooth. Stir in the rest of the oil, grated cheese, garlic and season to taste with salt.

Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook until al dente, 8 to 9 minutes. Drain pasta and mix well with pesto. Garnish with fresh basil leaves and grated Parmesan cheese, if desired. Serve.
