4 Perch fillet (each about 220 grams)
200 grams Porcini mushroom
3 Tbsps butter
1 sprig rosemary
50 milliliters white wine
salt
freshly ground peppers
1 Tbsp parsley

Preparation steps

1.

Rinse and pat dry fish fillets. Halve, if necessary.

Clean porcini mushrooms and cut into slices. 

3.

Heat butter in a pan and cook perch together with rosemary for about 4 minutes on one side or until golden brown. Season with salt and pepper. Turn over and add mushrooms, cook for 3-4 minutes more. Season mushrooms with salt and pepper. Add white wine to the pan and boil down briefly. Add parsley and season to taste. Arrange on warmed plates and serve.
