4 Bell pepper (Red and yellow)
2 scallions
2 garlic cloves
60 grams black Olives (pitted)
500 grams mixed Ground meat
4 Tbsps canned Tomatoes
1 egg
1 tsp ground paprika (hot)
1 tsp ground paprika
1 tsp herbes de Provence
salt
freshly ground peppers
2 Tbsps olive oil
150 grams Feta

Preparation steps

Line baking pan with parchment paper.

Rinse peppers and halve lengthwise. Remove seeds and ribs, leaving stems intact. Rinse and dry scallions, cut into thin rings. Set aside a little bit of scallions for garnishing. Peel garlic and chop finely. Drain olives and halve. Combine ground beef in a bowl with scallions, garlic and olives. Add tomato puree, egg, both paprikas and herbs. Season with salt and pepper. Stuff pepper halves with the mixture and arrange in a baking pan. Drizzle with oil and bake in preheated oven at 200°C (approximately 400°F) for about 30 minutes.

Drain feta. Cut into small cubes and spread on peppers during the last 10-15 minutes of baking.

Sprinkle with remaining scallions and serve.
