For the granita
2 Tbsps Peppermint leaf (coarsely chopped, fresh)
125 milliliters white wine
60 grams powdered sugar
1 Lime
500 milliliters Sparkling wine (dry)
For the garnish
4 flowers Currants (red)
4 Strawberries
4 Oranges
100 grams Watermelon
1 sprig Peppermint
4 centiliters peppermint liqueur (as desired)

Preparation steps

In a large loaf pan, mix the peppermint leaves with white wine and powdered sugar. Let sit for at least 2 hours. Squeeze lime juice through a sieve and stir into the wine-peppermint mixture. Add in sparkling wine. Put in the freezer and run a fork through it every 15-20 minutes.

Depending on how large or how small you want to the grain of the granita, stir more or less frequently. The granita should remain solid but have the consistency of crushed ice.

Peel orange and cut away the membrane of each slice. Place the slices in 4 well-chilled glasses. Equally distribute the oranges between each glass. Rinse and cut strawberries into quarters. Ball the watermelon. Arrange strawberries, melon, currants and mint leaves on top of the granita. 

To serve: Serve immediately. Optionally, pour 1cl (approximately 2 teaspoons) of peppermint liqueur into each glass immediately before to serving
