Remove the tough outer leaves and the stems of the artichokes and cut in half. Dip the artichokes in water with a little lemon juice to prevent discoloration, then dry thoroughly with a paper towel. Peel the garlic.

Heat 4 tablespoons olive oil in a large frying pan and add the artichokes and garlic. Sauté briefly, then add the lemon juice, 50 grams (approximately 2 ounces) of water and half of the parsley. Simmer covered until the artichokes are tender, about 20 minutes over low heat. Season to taste with salt and pepper.

Meanwhile, cook the penne until al dente. Heat some butter in a pan, add drained penne, artichokes and the rest of the parsley and mix well. Serve immediately, garnished with plenty of Parmesan.
