5 Tbsps good-quality olive oil (divided)
1 red chili pepper (rinsed; trimmed and sliced into rings)
2 cloves garlic cloves (peeled and minced)
2 tsps crushed Red pepper flakes
4 cups crushed San Marzano tomato drained (28 ounces)
freshly ground Black pepper (to taste)
½ cup grated Parmesan

Preparation steps

1.
Bring a large pot of salted water to a boil. Cook the pasta according to package directions, until al dente. Drain pasta; reserving 1/2 cup of cooking liquid.

Meanwhile, heat 3 tablespoons of olive oil in a large skillet set over medium heat, sautè the sliced red chili pepper, garlic, and red chili pepper flakes for 1 to 2 minutes, or until fragrant.

Stir in the tomatoes and bring to a boil; reduce heat and simmer for 5 minutes. Season to taste with salt and pepper. Remove skillet from heat source.
4.
Add pasta, reserved cooking liquid and remaining olive oil to the tomato sauce; toss over medium heat until pasta is well coated and heated through.

Divide among serving plates and sprinkle with Parmesan cheese. Serve.
