75 grams honey
1 Cinnamon stick
1 Vanilla bean
1 organic lemon

Preparation steps

Rinse and quarter 5 pears. Remove the core and coarsely chop. Add to a saucepan with the honey, cinnamon stick, slit vanilla bean, and 1 liter (approximately 1 quart) of water. Remove the zest of the lemon, and squeeze the juice. Add both to the saucepan, and bring to a boil. Reduce the heat, and simmer for 30 minutes stirring occasionally. Strain through cheesecloth into a bowl. Make sure not to press on the fruit, or the juice will become cloudy. Set aside the vanilla bean for garnish, if you'd like. Let the juice cool completely.

Rinse the remaining pear, quarter, remove the seeds, and thinly slice. Add with the vanilla bean (if using) into jars, then add the pear juice. Add cold mineral (or sparkling) water to taste, and serve.
