Ingredients

For the pancakes
1 ⅔ cups all-purpose flour
1 ½ cups milk
2 eggs
clarified butter
Plus
1 cup Dark chocolate (chopped)
cup cream
1 Pear (peeled and sliced)
1 Tbsp lemon juice
1 Tbsp powdered sugar
cup white wine

Preparation steps

Mix together the flour and some milk. Add the eggs, a pinch of salt and the remaining milk to form a smooth dough. Leave to stand for at least 20 minutes and then stir again.

Heat some clarified butter in a pan and add a ladle of the mixture. Move the pan around so that the mixture is evenly distributed on the bottom of the pan. Cook on a medium heat, then flip and cook on the other side. Place on a plate and keep warm in the oven (around 100°C). Continue like this until you have 20 thin pancakes.

Heat the cream and melt the chocolate in it.

Drizzle the pear slices with lemon juice and dust with icing sugar. Place in a pot and add the wine and 100 ml water. Simmer until the pears are soft, but still a little crunchy.
5.
Drain the pears and arrange the pancakes on plates with the pears and the chocolate sauce.
