Preparation steps

Preheat th eoven to 100°C (approximately 210°F). Line a baking sheet with parchment and draw a circle about 24 cm (approximately 9 1/2-inches) on the parchment. Flip the paper over so the meringue won't get pen or pencil marks on it. In the bowl of an electric mixer, beat the egg whites until firm. Gradually beat in the sugar and vanilla sugar until stiff, shiny peaks form. Fold in the cornstarch. Pile the egg white on the center of the circle and with a rubber spatula, spread it out to fill the circle and smooth the top, then make a depression in the middle. Sprinkle the sliced almonds over the meringue.

Bake until dry, about 2 hours leaving the oven door slightly ajar. Transfer to a wire rack and cool completely.

In a mixing bowl, beat the cream until stiff peaks form and fill the depression in the meringue with the cream. Peel halve and slice the kiwi. Rinse the berries, pat dry and arrange with the kiwi slices on the cream.
