Pastry Stuffed with Soft Cheese

Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4 and line a baking tray with grease-proof paper.
For the filling, beat together the egg yolks, quark, sugar, vanilla sugar, raisins, apricots, lemon juice and zest. Whisk the egg whites until stiff and fold into the quark mixture.
Roll out the pastry on a lightly floured work surface to roughly 30 cm x 30 cm. Spread the quark mixture over the dough, leaving a narrow edge free. Fold this edge inwards and roll the dough and filling up to form a roll.
Place the roll on the baking tray, brush with butter and bake for around 35-40 minutes. Leave to cool slightly and serve warm or cold.
