400 grams Spaghetti
4 large Tomatoes
1 garlic clove
5 Anchovy fillet
250 grams small Porcini mushroom
1 can Canned tuna (150 grams, drained)
1 bunch parsley
3 Tbsps olive oil
salt
freshly ground peppers

Preparation steps

1.

Cook pasta in boiling salted water according to package directions until al dente.

2.

Cut tomatoes in half, briefly blanch, peel, quarter and remove seeds. Then cut into cubes. Peel garlic and finely chop.

Cut anchovies into small pieces.

4.

Rinse mushrooms and cut into slices.

5.

Drain tuna and dice if needed.

6.

Rinse parsley, pat dry, pluck leaves, put some aside for garnish and finely chop the rest.

Heat olive oil in a pan, saute garlic and mushrooms, add tomatoes and anchovies and simmer for about 6 minutes. Season with salt and pepper and then add tuna.

8.

Drain pasta, reserving water. Add 1/2 cup of pasta water to tuna mixture. Fold noodles and parsley into tuna mixture. Season with salt and pepper. Serve with reserved parsley leaves as garnish.
