- 2 Red chili peppers
- 2 bunches parsley
- 2 garlic cloves
- 2 Tbsps toasted Pine nuts
- 120 milliliters olive oil
- 50 grams freshly grated Parmesan
- 1 splash lemon juice
- salt
- freshly ground peppers
- 400 grams Tagliatelle

Preparation steps

Rinse chiles. Cut 1 chile crosswise into rings. Halve second chile lengthwise, remove seeds and ribs, and finely chop. Rinse parsley, shake dry and strip leaves from stems. Peel garlic. Combine garlic, pine nuts, chopped chile and parsley leaves in a food processor and process until coarsely chopped. Mix in oil and Parmesan and season with lemon juice, salt and pepper.

Cook pasta in salted boiling water until al dente. Drain and serve with pesto on plates. Garnish with chile rings.
