350 grams Rigatoni (or Penne)
2 shallots (finely diced)
2 garlic cloves (pressed)
1 tsp thyme
1 bay leaf
100 grams Bacon (diced)
2 pickled ground paprika (cut into strips)
50 grams Olives (chopped)
350 grams Tomato sauce
100 grams mixed Mushrooms (chopped)
1 tsp freshly chopped oregano
salt

Parmesan (for garnish)

Preparation steps

Heat oil in a pan. Fry chicken at a high temperature for about 10 minutes. Wrap chicken in foil and keep warm in oven at 80°C (approximately 175°F). Cook pasta according to package label in abundant salted water. For sauce fry bacon in a frying pan.

Add shallots, garlic, mushrooms and spices to pan and fry. Add remaining ingredients to pan, pour some water as needed and simmer everything in a pot, covered, for 15-20 minutes. Season sauce with salt and pepper. Cut chicken into slices and mix. Drain pasta, divide between plates and pour sauce on top. Sprinkle with Parmesan to serve.
