Preparation steps

1.

Rinse lemon in hot water, dry and grate peel finely. Squeeze juice. Peel shallot and chop finely. Heat 1 tablespoon margarine in a pan and sauté shallot. Stir in soy creamer and lemon juice. Season to taste with salt, pepper and nutmeg. Simmer uncovered for 10 to 15 minutes until sauce thickens.

Boil penne in salted water until al dente. Rinse spinach, spin dry and chop leaves. Melt remaining margarine in a pan and cook spinach slightly. Add to sauce and cook for 2 to 3 minutes.

Coarsely chop walnuts. Season sauce to taste and serve with pasta, spinach and nuts. Add lemon zest and ground pepper and serve.
