- Ingredients
- 200 grams Peas (frozen)
- 400 grams Linguine
- salt
- 500 grams Italian sausage
- 1 tsp freshly chopped mint
- 1 tsp freshly chopped oregano
- 2 Tbsps olive oil
- 4 Tbsps Crème fraiche
- 100 milliliters Whipped cream
- salt
- freshly ground peppers
- 3 Tbsps freshly grated Parmesan
- mint (for garnish)
Preparation steps
1.
Thaw the peas. Cook the pasta in boiling salted water until al dente.
2.
Remove the sausage from the casing, knead with the herbs, shape into small balls and fry on all sides in a hot pan with the oil. Add the peas, creme fraiche and heavy cream. Season with salt and pepper and simmer for 2-3 minutes.
3.
Drain the pasta, saving 2-3 tablespoons of the cooking water. Add the Parmesan cheese and the pasta to the pan and toss well. Season to taste with salt and pepper, divide into bowls and serve garnished with mint.
