- 2 Tbsps good-quality olive oil
- 8 Italian sausage (sweet or hot or a combination of both)
- 1 green Bell pepper (rinsed; trimmed and cut into strips)
- 2 red Bell pepper (rinsed; trimmed and cut into strips)
- 1 large sweet onion (peeled and sliced)
- salt (to taste)
- freshly ground Black pepper (to taste)
- 4 cloves garlic cloves (peeled and minced)
Preparation steps

In a large skillet with a lid, heat the oil over medium heat. Add the sausages and brown them slowly, reduce heat if necessary. Cook for 4 to 5 minutes, turning them frequently to brown all sides. Once browned, remove from skillet and set aside.

Increase heat to high and add the peppers and onions, toss gently to coat with oil. Cook several minutes or until tender crisp. Season to taste with salt and pepper. Add minced garlic and cook until fragrant, about 1 minute. Use a wooden spoon to scrape any browned bits from the bottom of the skillet.

Add the sausages back into the skillet. Bring to a simmer and reduce heat to low. Cover and simmer until the peppers are soft and the sausages are cooked through, about 15 to 20 minutes.

Serve as a sandwich, with pasta or over rice.
