- 2 ⅔ cups ground Meat (pork)
- 2 Tbsps olive oil
- 1 carrot (very finely diced)
- ⅔ cup Celeriac (very finely diced)
- 1 onion (very finely diced)
- 1 clove garlic cloves (very finely diced)
- 2 Tbsps tomato puree
- ⅔ cup Red wine
- 1 cup strong Beef stock
- sugar
- 2 cups Sieved Tomatoes (or passata)
- 8 cups Rigatoni
- olive oil (for the baking dish)
- ¾ cup grated Mozzarella
- ¾ cup grated Parmesan

Preparation steps
1.
Brown the meat in hot oil, stirring, until crumbly. Add the carrot, celeriac, onion and garlic and fry for a further 2-3 minutes.

Add the tomato purée, deglaze with the wine and pour over the meat stock. Season with salt, ground black pepper and a pinch of sugar and stir in the tomatoes. Half cover and simmer for around 30 minutes, stirring occasionally. Add more stock if required and check the seasoning.

Boil the pasta in salted water until still very al dente.

Heat the grill function on the oven and brush a casserole dish with oil.
5.
Drain the pasta thoroughly and tip into the dish. Pour the sauce over the top, sprinkle with the cheese and grill for 10-15 minutes.
