200 grams Bacon (sliced)
400 grams Cherry tomatoes
2 shallots
2 garlic cloves
3 Tbsps olive oil
2 Tbsps Tomato paste
200 milliliters Red wine
500 grams Tortiglioni pasta
salt
2 sprigs Basil
freshly ground peppers
freshly grated Parmesan (for sprinkling)

Preparation steps

Cut bacon into strips. Rinse tomatoes. Peel shallots and garlic and chop finely. Heat oil in a pan and saute bacon, shallots and garlic for 3-4 minutes. Add tomato paste and red wine. Add tomatoes and simmer for about 15 minutes, stirring occasionally. If necessary, add some water.

Cook pasta in boiling salted water until al dente. Rinse basil and pluck off leaves, chop coarsely. Season sauce with salt and pepper and add basil.

Arrange pasta in bowls and top with sauce. Sprinkle with Parmesan and serve.
