- 350 grams Spiral pasta
- 5 Tbsps olive oil
- salt
- freshly ground peppers
- 2 scallions
- 3 garlic cloves
- 1 Tbsp chopped parsley
- 400 grams ripe Cherry tomatoes
- 8 sun-dried Tomatoes (in oil)
- 1 scoop Mozzarella
- Lettuce
- 1 Tbsp Mustard
- 4 Tbsps White vinegar
- 4 Tbsps Whipped cream
- scallions (for garnish)

Preparation steps
1.
Cook rotini in plenty of boiling salted water until al dente. Drain, rinse and drain again well.
2.
Rinse scallions, trim and chop the white and light green portions. Cut the dark green portions into strips and set aside for garnish. Rinse cherry tomatoes, pat dry and cut in half or into quarters. Drain sun-dried tomatoes and chop. Rinse the lettuce, trim, spin dry and cut into thin strips. Drain the mozzarella and cut into small cubes.
3.
Mix garlic, scallion and parsley with olive oil, mustard, vinegar and cream. Season to taste with salt pepper.
4.
Mix pasta with the salad dressing, tomatoes, mozzarella and lettuce and arrange on plates. Serve garnished with reserved scallion tops.
