- 400 grams Penne
- 200 grams Romanesco broccoli
- 50 grams Mayonnaise
- 2 Tbsps sour Whipped cream
- 3 Tbsps spicy wine Vinegar
- 2 Tbsps chopped Walnut
- salt
- Red pepper flakes
- 1 Endive
- Lollo rossa (to garnish)
Preparation steps
1.
Cook the penne in boiling salted water until al dente according to package directions. Shock in cold water and drain.

Blanch the romanesco in boiling salted water 3-4 minutes until soft, shock in ice water and drain.

Mix the mayonnaise with sour cream, vinegar and chopped walnuts. Season with salt, pepper and red pepper flakes, mix in pasta and romanesco, cover and let stand for about 10 minutes.

Rinse the belgian endive and green leaf lettuce and coarsely chop.
5.
Season the past again, mix in belgian endive and transfer to plates. If desired, stack the penne in a tower. Serve garnished with green leaf lettuce.
