- 200 grams macaroni
- 5 Tbsps olive oil
- 1 scoop Mozzarella (about 125 grams)
- 2 Tbsps lemon juice
- salt
- peppers (freshly ground)
- 1 bunch Arugula
- 1 small head Radicchio
- to garnish
- Basil
- strips lemon zest
Preparation steps
1.
Cook pasta in plenty of salted boiling water until al dente. Drain, and rinse with cold water. Drain again and mix with 1 tablespoon olive oil.

Separate radicchio into individual leaves. Rinse radicchio and arugula, then spin dry and tear into bite-sized pieces, if necessary.
3.
Drain mozzarella and cut into small pieces.
4.
Mix lemon juice with remaining olive oil, season with salt and pepper and mix with pasta. Add arugula, radicchio and mozzarella and toss to combine. Divide pasta salad among plates and serve garnished with basil and lemon zest strips.
